How to make jelly
1、Milk coffee jelly
Ingredients:
200g milk, 40g vanilla sugar, 6g agar, a little rum, cream, mint leaves, pure coffee
Method:
(1) Soak agar in cold water to soften, steam in a cage for 15 minutes to completely melt and set aside;
(2) Cook the milk with the homemade vanilla sugar until it reaches 70-80°. Add half or 2/3 of the agar and stir until the agar is completely melted;
(3) Strain the milk, remove the vanilla pods and the unmelted agar, pour into a square container and leave to cool in the fridge for 2 hours until completely solidified;
(4) Dissolve the instant coffee in 250ml of boiling water, add 10g of sugar and the remaining agar, stir well, allow to cool and then add 1 tbsp of rum;
(5) Pour 2/3 of the total amount of coffee mixture into the container halfway respectively;
(6) Remove the milk jelly and cut into sugar cubes;
(7) When the coffee is about to set, add a few pieces of milk jelly and pour the rest of the coffee mixture into the cups;
(8) Allow to set for about 15 minutes and then garnish with a few whipped cream flowers and mint leaves.
2、Tomato jelly
Ingredients:
200g of tomatoes, 10g of agar, a little sugar
Method:
(1) Soak agar in warm water until soft;
(2) peel and cut tomatoes into pieces and stir into juice;
(3) Add agar to water and heat slowly over low heat until melted, add sugar and stir until thickened;
(4) Add the tomato juice and stir well to turn off the heat;
(5) Pour into jelly moulds and place in the fridge until solidified.
3、Strawberry jelly
Ingredients:
10g strawberries, 3 pieces of fish sheets, sugar to taste
Method:
(1) Use your hands to break the fish film into small pieces and put them in water to soften, then heat and steam them into fish film liquid;
(2) Cut 8 strawberries into dice;
(3) Pour water into a pot and bring to the boil, add the diced strawberries and cook to a red sauce, then fish out the drippings;
(4) Pour the fish film mixture slowly into the pan, stirring in the strawberry juice as you pour, and add the sugar to dissolve;
(5) Cool the fish film mixture and the sweetened strawberry juice, and remove any floating foam from the juice;
(6) Pour the strained strawberry juice into the jelly moulds, cover with the lids and chill in the fridge for 2-3 hours.
